Descubre c\u00f3mo consumirla"},"content":{"rendered":"<p><![CDATA[\n\n<p style=\"text-align: justify;\"><strong>\u00bfCu\u00e1ntos no nos tomamos una horchata de vez en cuando?\u00a0\u00bfY cu\u00e1ntos nos hemos planteado alguna vez qu\u00e9 es la chufa? \u00bfY sus propiedades?<\/strong><\/p>\n\n\n\n\n<p style=\"text-align: justify;\">La Chufa es un tub\u00e9rculo con forma de nudo que procede de las ra\u00edces de la <em>Cyperus esculentus, <\/em>o m\u00e1s com\u00fanmente llamada Juncia Avellanada.\u00a0Se cree que su procedencia podr\u00eda situarse en Sud\u00e1n (\u00c1frica), en una <strong>regi\u00f3n llamada Chuf,<\/strong> aunque diferentes civilizaciones antiguas, especialmente Egipto, Persia o China, tambi\u00e9n lo utilizaban como base de su dieta.<\/p>\n\n\n\n\n<p style=\"text-align: justify;\">Los \u00e1rabes fueron los que la introdujeron en Espa\u00f1a sobre el siglo VII. Se comenz\u00f3 a cultivar\u00a0principalmente en Levante, donde se populariz\u00f3\u00a0por ser el principal ingrediente de su t\u00edpica Horchata. Esta\u00a0bebida vegetal se obtiene del prensado de la Chufa fresca, mezcl\u00e1ndola en un laborioso proceso\u00a0con agua, az\u00facar y, en algunos casos, con canela y lim\u00f3n.<\/p>\n\n\n\n\n<h2 style=\"text-align: justify;\">\u00bfCu\u00e1les son sus componentes?<\/h2>\n\n\n\n\n<p style=\"text-align: justify;\">Los componentes de la Chufa son principalmente los hidratos de carbono, seguido de grasas, fibra y prote\u00ednas.\u00a0Dentro de los hidratos de carbono, que representan aproximadamente el 61%, un 15% son az\u00facares y 22% de fibra alimentaria. Esto quiere decir que es un <strong>producto energ\u00e9tico<\/strong> que adem\u00e1s nos va a ayudar a mantener un buen funcionamiento de nuestro<strong> tr\u00e1nsito intestinal.<\/strong><\/p>\n\n\n\n\n<p style=\"text-align: justify;\">La\u00a0cantidad de grasas que contiene la Chufa puede considerarse\u00a0relativamente alta, pero cabe destacar su alto contenido en <strong>\u00e1cidos grasos monoinsaturados,<\/strong>\u00a0que son los que solemos denominar como grasa saludable. Por tanto, es una gran fuente de Omega 9 (que ayuda a mantener los niveles de colesterol \u00f3ptimos aumentando el \u201ccolesterol bueno\u201d).<\/p>\n\n\n\n\n<p style=\"text-align: justify;\">La Chufa tambi\u00e9n posee propiedades digestivas, dado que contiene almidones, amino\u00e1cidos y enzimas, como son la amilasa y la lipasa, que se encargan de <strong>fraccionar los hidratos de carbono \u00a0y las grasas<\/strong> respectivamente, facilitando el trabajo a nuestro aparato digestivo, previniendo de esta manera la flatulencia y favoreciendo la absorci\u00f3n de nutrientes.<\/p>\n\n\n\n\n<p style=\"text-align: justify;\">En cuanto a su contenido en vitaminas y minerales, debemos destacar el aporte de las Vitaminas C y E, as\u00ed como Calcio, F\u00f3sforo, Potasio y Magnesio.<\/p>\n\n\n\n\n<p style=\"text-align: justify;\">Es lo que denominar\u00edamos un <strong>reconstituyente<\/strong>. Gracias a su alto valor nutritivo y energ\u00e9tico es aconsejable en personas con cansancio, agotamiento, estr\u00e9s, deportistas\u2026 y gracias a que no contiene cafe\u00edna ni ning\u00fan otro estimulante es recomendable en ni\u00f1os, embarazadas y personas mayores.<\/p>\n\n\n\n\n<p style=\"text-align: justify;\">Y os estar\u00e9is preguntando&#8230;<\/p>\n\n\n\n\n<h2 style=\"text-align: justify;\">\u00bfQu\u00e9 otras maneras, aparte de la horchata, tengo de consumirla?<\/h2>\n\n\n\n\n<p style=\"text-align: justify;\">Normalmente la\u00a0Chufa en s\u00ed\u00a0se vende\u00a0desecada,\u00a0ya\u00a0que es el proceso al que se somete para su conservaci\u00f3n. Por tanto, podr\u00edamos hidratarla y consumirla.\u00a0Aunque, hoy en d\u00eda, tambi\u00e9n podemos encontrarla en polvo.
